Learn How to Make Bahn Xeo

Chef Annie takes you through how to make Bahn Xeo (Vietnamese Crepes) from scratch.  While pho is still the most common and well known Vietnamese dish, bahn xeo is starting to gain in popularity across the US and rest of the world.  Its crispy texture, bright color, and delicious taste make bahn xeo one of my husband's favorite dishes.

Banh xeo is a crispy pancake popular in Vietnam. Banh means cake while xeo means sizzle so the name refers to the loud sizzle sound the batter makes when it hits the pan. There are many types of banh xeo but most will include pork and shrimp. This recipe will also include a vegan version with tofu and mushrooms.

Many think banh xeo is an egg-based crepe due to the yellow color. However, the crepe gets its color from turmeric powder rather than eggs.  Banh xeo is also a popular dish in Cambodia where it is called banh chao. There is also a Thai version called Khanom bueang Yuan.

This recipe will actually include several different recipes: banh xeo, nuoc cham (dipping sauce), and cold pickled carrots/daikon (served as a condiment).
