Learn how to cook Jamaican callaloo with fried dumplings, curry chicken and steam fish. These dishes are authentically Jamaican, and are delicious treats to master. You will learn a little about the cultural influences on some of the dishes, but also about little changes you can make if some ingredients are not readily available. Videos will show you the step by step process for each dish.

Callaloo is a popular iron-rich vegetable in Jamaica. It is usually eaten at breakfast but can be adjusted to serve as lunch or dinner. It goes well with fried dumplings which can be made in a variety of ways. It is usually made mainly with white flour, but those who are health conscious may opt for wheat flour or a combination of white flour and cornmeal.

Curry is so popular in Jamaica that it is not surprising to see it served at weddings and after funerals. It is usually cooked with scotch bonnet pepper (the staple pepper in Jamaican cooking), because to most Jamaicans curry is not curry unless your tongue is on fire!

Seafood is another staple in Jamaican cuisine because we are a Caribbean island. Of all the seafood we eat, fish is the most popular. Crustaceans, such as shrimps, crabs and lobsters are also loved by Jamaicans. Today, you will learn to cook a simple Jamaican steam fish!
